The BQ Project —

So, we’d previously talked about what, conceptually, was in Bisquick. Having the box in front of me, I can say that the listed ingredients are:

Enriched Flour Bleached (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid). Vegetable Oil (palm, canola, high oleic soybean, and/or sunflower oil. Corn Starch, Dextrose, Leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate). Salt, Sugar, Monoglycerides.

Moving up to the regulated Nutrition Facts, we find that a serving is 1/3 cup mix or 40g — and that each serving has 2g of Added Sugars. The Total Fat is 3g, which would be in that Vegetable Oil section. There’s 380mg of Sodium in each serving, which would be about (Na = 22.99, Cl = 35.45, sum = 58.44….380mg of Sodium x 58.44/22.99 =) 965.95mg of salt. [Yes, I know that part of the sodium is in the leavening.] Incidentally, each serving has 150 calories.

The nonfat dry milk is made of nonfat dry milk, vitamin A palmitate, and vitamin D3. It has 80 calories per 23g (which mixes to one ersatz cup of milk).

You can see both why BQ can be a very helpful prepping tool but why homemade mixes may be superior. You don’t need for every 40g of mix to have 2g of sugar and 1g of salt.

It’s the “gateway drug” of cooking. That’s not to say that it’s the gateway drug of healthy cooking, by a long shot. But in a TSHTF scenario it can be a tremendous resource.

I bought four boxes of it yesterday. We use it once a week for Sunday pancakes, works just great. (No snooty patooties in our house.) Followed the pancakes up with rigatoni w/Amatriciana and broccoli rabe — so we DO cook. 😄

One can mixed once own put it into a mason jar and place it in the refrigerator. Maybe buy a small one and put it in the basement and keeps several jars in there. I know people who do that with home made cooky mixes , pancake mixes and waffles.
Most of the time I mix together evening before what I need in the morning making pancakes or waffles or German rolls. If I do not do that I might skip out making this it is easier prepare before.
I noticed for the bread maker all recipes have sugar up to 4 tbsp. I never put sugar into pancakes or breads. Pancakes people put syrup on it I put blueberries on my one pancake.
Now I am hungry. I think next week I make a German pancake with apples 🙂

Might be going out on a limb here, but sugar can sometimes act as a preservative… if yeast were in the mix, it could also help there (but then it’d go stale rather quickly)…

Wonder if “Jiffy” has an equivalent, with less sugar and less salt? Or Krusteaz?

The Biscuit recipe on the back of the box.

2-1/4 cups mix
2/3 cup milk

  1. Heat oven to 425. Stir ingredients until soft dough forms.
  2. Drop dough by spoonfuls onto ungreased cookie sheet.
  3. Bake 10-12 minutes until golden brown.

Well, obviously we’re going to be screwing around to make 1/8 of this recipe, but let’s look at some other things first.

First, this is baking at 425. Normal things bake at 350. When you cook at an elevated temperature, you are looking for a different effect on the outside of the item than on the inside. If you want your steak to have a tasty char but be pink inside, you have to cook at a higher temperature than if you want less char and a grey center (which cooks longer). In this case, they want a tanned outside, but soft inside.

For Scott’s “Crazy Eddie” toaster-oven, we’re going to learn many things by doing test runs. If the outside is scorched, but the inside is moist (like, not cooked enough), it will be too hot — and we’ll go down that branch. If the outside is barely browned, and it’s crispy and dry all the way through like a dog biscuit, then the toaster-oven is not hot enough, despite any flames. We don’t have a million dollars invested in this, we can just toss things so long as we learn from them — which reminds me: IT IS SERIOUSLY RECOMMENDED to keep a notebook/logbook. In that we’re playing with bisquick and toaster-ovens, things that solve one problem early on might help solve a different problem much later.

Whenever you’re cooking bread-like things, you’re trying to bake foam, and much of the time this involves getting the bake and the foam to happen at the same time.

Next, the “stir ingredients” bit implies you have a mixing bowl. Fortunately, when you talk about one biscuit, this doesn’t have to be anything too ornate. On the other hand, what you’re stirring with becomes a problem in a smaller container. We are fortunate enough to have two sets of tableware — one partial of an ugly modern setting, and a nice setting we actually eat with. The modernware has flat loops of metal for handles, and the forks have three tines. They work great as cooking forks, because the three tines leaves enough space that they don’t clog. You’ll have to rummage around with what you have.

The next instruction says “drop by spoonfuls”. Screw that — this is one batch, one biscuit.

But let’s consider what “ungreased cookie sheet” needs to be here. Our toaster oven has a shallow metal tray that we haven’t managed to lose over the decades, which would seem to qualify….but we always prep from there. If we’re going to do something like roast kabobs, we’ll take a sheet of aluminum foil off the roll and make it into a little box that fills the tray. When things are done and it’s time to clean-up, toss the foil and the tray may not even need washed.

Mind you, this is not necessarily a completely “toaster-oven” thing. We have aluminum cookie sheets and line them with foil in the big oven. That way, we could have three godkids baking away simultaneously…..

OTOH, the right thing to line your tray is baking parchment….which costs more than aluminum foil and is harder to find…..and is possibly unsafe until we better understand Scott’s oven. [Ray Bradbury’s classic “Fahrenheit 451” was titled from the temperature that paper would burst into flame. The 425 in the recipe is worryingly close.]

But, then, there is the prospect that there is no tray…..in which you get to try to figure out a substitute. It has to fit in the t-o and not have a problem with the thermal “ride” it’s going to take. If it will take more than a minute to get warm, you may have to preheat it. Since you’re only dealing with a single biscuit, there are a lot options open to you.

When I mix up my batches, the tops tend to be spiky and irregular. I look to the spikes and edges to brown rather than the whole thing.

Tomorrow — calc the portions, mix one, and bake it in my t-o. Give portions to Scott, see what his t-o gives him.

Good morning, Coothie!

Southern ladies for generations have sworn by White Lily or Martha White flour, and some us self-rising flour for their biscuits.

Here are two recipes recently posted on QuodVerum:

RECIPE #1 from a cafe in someone’s home town that serves a lot of biscuits:

One cup of self-rising flour and one cup of heavy whipping cream. 

That’s it. 

Mix the ingredients together, roll them out, cut them, brush them with melted butter and bake them at 420° for 12 minutes or so until they get lightly browned on the top.

RECIPE#2
BISCUITS – *THE VERY BEST*

Mix:
2 C all-purpose flour – preferably White Lily or Martha White
1 T baking powder – If using buttermilk – add 1/2 tsp soda to dry ingredients
1 T sugar
1 tsp salt

Grate in:
3/4 stick frozen butter*
(fluff into the dry mix)

Add (LIGHTLY combine):
1 C (COLD) milk or buttermilk

* Turn wet dough out onto floured surface, form into ball and press to about 1″ thick.
* Cut biscuits to desired size/shape, combine scraps and re-cut until all is used.
* Bake on ungreased baking sheet at 425 F for 12-15 minutes or until tops are nicely browned. 

*Can use whole stick of butter

NOTE – I love buttermilk biscuits, so I might try #1 with maybe 1/3 whole milk buttermilk, 2/3 cup heavy whipping cream. I might even try 1/2 and 1/2 buttermilk and sour cream. I like to experiment with recipes, follow my own preferences, and rarely go exactly by a recipe, especially with the herbs, spices, etc.

NOTE – I don’t make white flour breads, cook with white rice or make white gravy these days….so I might try to make some whole wheat biscuits using one of these recipes.

I like, and in old age, need the fiber in whole wheat flour, breads, brown rice.

I have a KitchenAid grain mill and grind my own flour from hard winter wheat – lots of gluten!

My target area has a chain called “Biscuitville” where they practically make the biscuits in your lap. All their ingredients are local, and they’ve got signboards on the walls for all their sources. I’m going to have to be very careful when I get there because their stuff is seriously delicious and I’ll have to only indulge as a rare treat.

This BQ Project isn’t that. It’s about prepping for small amounts (one person) with small resources (toaster-oven) and limited stores (Bisquick in a box).

The recipe with only self-rising flour and cream reminds me of one I developed to navigate all the allergies/intolerances we have had in our family. It had to be gluten-free and without milk or eggs. Biscuits are already egg-free, usually, and the flours can vary as long as there is some xanthan or guar in the mix. And at some point I went to using canned coconut milk to replace both the milk and the butter. Works quite nicely. You can even use it to brush the tops as in your recipe above.
As we have been talking about emergency rations lately, it occured to me this may be a good solution för “non-allergics” as well. Canned coconut milk will keep a long time with no refrigeration required.

It was always a combination of whole-grain flour; milo, buckwheat, millet, cornmeal or brown rice mixed with the same amount of some kind of starch; cornstarch, tapioca flour, potato starch, possibly arrowroot. Sample recipe:

1 c. brown rice flour
1/2 c. each cornstarch and potato starch
1 1/2 T. baking powder
2 tsp. xanthan or guar gum
1/4 tsp. salt
1 c. canned coconut milk, stirred
Shape into biscuits and brush with coconut milk.
Bake as for biscuits.

This mix of flour+starch will not brown as nicely as wheat and will be a bit more crumbly. But to a family who had gone for years without a proper biscuit, they tasted pretty good!

You could use buckwheat flour without adding starch and possibly without xanthan or guar gum.
Oat flour would also work with starch. Sometimes it is not tolerated as a gluten-free option, though.

Another recipe for emergency situations is Scottish Oatcakes. You only need oat flour or blended/milled oatmeal, salt, bacon grease or some kind or oil and water…..and they are made on a griddle/frying pan.

My daughter and I used to make them for breakfast with a similar recipe:

Quick note — cereals are grasses with edible seeds. Buckwheat is actually a member of the aster family and not a grass. Gluten is mainly found in wheat, barley, and rye — but not so much in rice, corn, and other exotic grains. https://en.wikipedia.org/wiki/Gluten

Amaranth Uses & HistoryAmaranth (amaranthus caudatus) is a gluten-free, pseudo-cereal seed with an earthy, grassy flavor, similar to beets. Amaranth seeds can be cooked into porridge, ground into flour, popped or flaked. As a complete protein (containing 18 amino acids), amaranth was an energizing staple for the Aztecs and Mayans who used it to make tortillas, atole and sweets. This tiny seed is a rich source of calcium, iron, manganese, phosphorus, magnesium and potassium! Amaranth contains more protein than most other grains and pseudo-cereals.
Amaranth shares many characteristics with quinoa. Both are tiny seeds that are gluten-free, cook quickly, and are complete proteins. While both have a high protein content, amaranth has 9 grams in a 1-cup cooked serving, while quinoa has 8 grams. Also, amaranth has twice as much iron (5 mg in a 1-cup serving). Both quinoa and amaranth are a good source of magnesium and zinc, as well as Vitamin B6. Both have a fairly bland, earthy flavor, but quinoa is milder and can take on the flavor of a dish more easily than amaranth can. Quinoa can be cooked into a soft, fluffy side dish, whereas cooked amaranth has a much wetter consistency with a bit of a chew to it.
The earthy, beet-like flavor of amaranth pairs well with squash, corn, sesame, cinnamon, vanilla and chocolate flavors, offering endless possibilities!
Amaranth flour is delicious in pancakes, quick breads, crackers, brownies and much more. This tiny grain can also be popped and mixed into protein bars. While baked goods could be made with 100% amaranth flour, the results would be dense, so it’s best to combine it with other flours for a lighter texture. For quick breads and pastries, excellent results can be achieved by using amaranth flour for 25%-50% of the flour in the recipe.
Since amaranth flour is gluten-free it doesn’t lend itself well to yeast breads, or other recipes where gluten development is essential. In recipes where gluten development is desired, we recommend combining 20% amaranth flour with 80% gluten-containing flours.
Amaranth makes a wonderful addition to gluten-free flour blends.
To cook, simmer 1 cup amaranth with 2-3 cups liquid (broth, milk, water, apple cider, etc.) for 20 minutes. Cook uncovered for a drier consistency, and covered for a wetter, porridge consistency. Interestingly, cooked amaranth has a sheen to it, similar to caviar.

Yes, there is amaranth and also quinoa. I forgot those two possibilities. Quinoa I like, both cooked and in baked goods. I use it sometimes as a substitute for bulgur wheat in turkish or arabic dishes. But I have never developed a taste for amaranth. Even a small amount tastes “earthy”as in the description above. Lots of people like it, though.

Yup. Been doing the gluten-free baking thing for about 25 years. There is some discussion about oats. If I understand it correctly, the problem is more one of cross-contamination in the field or processing facility. We have always been fine with oats. There are certified gluten-free oats, though.

Of course – hard winter wheat makes BREAD flour – lots of gluten.

For Biscuits – you want soft wheat – that makes ALL PURPOSE flour.

If you really want to go DEEP South – try these with apple butter, cane syrup, local honey, mustard and a slice or smoked or country ham inside.

SWEET POTATO BISCUITS – Paula Deen

Ingredients
• 2 heaping tablespoons sugar 
• 1 1/4 cups all purpose flour 
• 4 teaspoons baking powder 
• 1/4 cup (1/2 stick) butter 
• 3/4 cup mashed cooked sweet potatoes 
• 1/2 teaspoon salt 
• 2-4 tablespoons (depending on the moisture of the potatoes) milk or cream
Directions
Preheat the oven to 450 °F. Sift together flour, sugar, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and softened butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.) Makes about 15-18 biscuits.

Ingredients
• 1 3/4 cups unbleached all-purpose flour, plus more for kneading and shaping

• 2 1/2 teaspoons baking powder

Directions
• Step 1
Make the dough: In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. With a pastry blender or 2 knives, cut in butter until mixture resembles coarse meal, with some pea-sized lumps of butter remaining. In a small bowl, whisk together sweet potato puree and buttermilk; stir quickly into flour mixture until combined (do not overmix).

• Step 2
Shape the biscuits: Turn out dough onto a lightly floured surface, and knead very gently until dough comes together but is still slightly lumpy, 5 or 6 times. (If dough is too sticky, work in up to 1/4 cup additional flour.) Shape into a disk, and pat to an even 1-inch thickness. With a floured 2-inch biscuit cutter, cut out biscuits as close together as possible. Gather together scraps, and repeat to cut out more biscuits (do not reuse scraps more than once).

• Step 3
Bake the biscuits: Preheat oven to 425 degrees, with rack on lower shelf. Butter an 8-inch cake pan. Arrange biscuits snugly in pan (to help them stay upright). Brush with melted butter. Bake until golden, rotating once, 20 to 24 minutes.

Yes, Low fat is BAD for you. But very very good for the pockets of ADM and Monsanto who pushed High Fructose corn syrup as a substitute for fat.

If you are not eating fat (which satisfies hunger) and protein you are eating sugars and starches ==> sugar.

I have ‘low blood sugar’ and my insulin level spikes very fast if I eat sugar and then I head for insulin shock and become very sleepy and jittery. Basmati rice (with meat & fat) has zero effect on me while a candy bar will flatten me.

I’m afraid you’ve got it wrong with respect to resistant starch and SIBO. It’s not as simple as “giving bacteria food to ferment”- first of all, resistant starch selectively feeds beneficial bacteria in the gut, and the fermentation process does not happen until the starch reaches the colon. Since the RS is not used as an energy source by bacteria in the small intestine, it does not contribute to SIBO (standing for small intestinal bacterial overgrowth).

Not only does it not feed the bacteria in the small intestine, but many strains of pathogenic and all tested strains of beneficial bacteria that I have seen have shown to adhere to the starch, thus carrying them out of the small intestine and into the large intestine where they can be excreted in feces. So it reduces levels of pathogens, is selectively used by beneficial bacteria, reduces levels of bacteria in the small intestine, increases butyrate production, and restores the integrity of tight junctions (if leaky gut develops from your SIBO, which is likely).

Additionally, the SCFA (short-chain fatty acids) produced by RS digestion increases the frequency of peristaltic contractions of the ileum, which would again probably aid in the expulsion of bacteria from the small intestine. For some reason, it seems that everybody “knows” that RS is bad for SIBO, and yet I have yet to find a single scrap of information to support this clam, and plenty to think that such a claim might not be true at all. Notice that all the sites that http://www.siboinfo.com/diet.html uses as references simply advocate a FODMAPS diet, which actually does not contraindicate starches at all!

Again, to recap: RS removes bacteria from the small intestine and selectively feeds beneficial bacteria which results in butyrate production and proper function of tight junctions (thus relief from leaky gut).

I make sourdough bread and bake it in a cast iron pot. The pot is heated before putting the bread in. The crust is hard we love bread like that. Really does not matter if I make it from rye or not. I prefer rye breads or mixed.
I am on my fast again and only eat once a week a slice of bread or one pancake or one bagel 🙂
My husband I think likes the change that is why we have a bread maker. Though when I indulge myself into a loaf of bread it has to be worth while no bread maker bread for me 🙂

The BQ Project —

So, this is a mini-rant about a topic that really doesn’t belong here, but I felt like letting it out.

One of the things in cooking is that there are traditional methods of measuring stuff. If you’re doing brown sugar for Quaker Oats under-the-lid oatmeal cookies, you’re supposed to take a measuring cup, put some sugar in, pack it down with the bottom of a spoon, and repeat until the cup is slightly over-full. Then, you’re supposed to scrape the edge of the cup with the back of a butter-knife to make it even. And then, just to rub it in, the next step after you add the sugar goes much better if the sugar is light and fluffy and not a compacted puck.

On the top of the Bisquick box, it notes: “TO MEASURE BISQUICK MIX: Spoon into dry-ingredient measuring cup; level with knife. DO NOT SIFT.” I have had a bunch of people tell me that you need to have your Bisquick in a container where you can scoop it into a measuring cup in one shot, then level with the back of a butter-knife.

This is the sort of bullshit that made me buy a kitchen scale. If I measure by weight, I don’t have to care about compacting this or compacting that or leveling-off with the back of anything.

So you can expect that I’ll be doing trial things using weighed ingredients, which I will convert back to measured to help others participate.

Our son in law, an M.D. measures their coffee by weight – and it’s always way to strong and bitter for my taste. They add cream/sugar to theirs, so it’s great for them. When staying over at their house, I always add a bit of water.

Of course sometime one only has the cup choice available.

Good idea. Over here, people measure ingredients by weight; it’s the only way to consistently get the same amount/proportion of ingredients. Of course, the recipe has to be correct. Profis, either chefs or food scientists, etc., do that.

The doctor that DP linked above – who is postponing her child’s broken bone care due to covidiocy is not worthy of her Medical Doctor license.

She does not say that it is a broken bone, just that she would normally have it X-rayed.

She would also be aware of the situation in her area. Worse case? Child Protective Services takes the kid. Doctor Robinson had that almost happen to his sick child because a nurse thought his other kids were TOO POLITE and that was three decades ago.

If she is a medical doctor, she very likely knows whether it is a broken bone or just a bad sprain. Also the broken bone may not have ‘dislocated’ and therefore just immobilizing the ankle will allow it to heal correctly. (While in Mexico, I set a bone in a fellow caver’s hand, immobilized it and it healed very well. The hand was later X-rayed for a different problem. The Doc wanted to know who did the nice job of setting that bone.)

Bone setting has been done by doctors for centuries WITHOUT Xrays. We need to remember that. I have at least 4 broken bones that were never subjected to x-ray.

I get what you are saying. Immobilizing is critical. They put a cast on mine, however.

However, my grandmother’s broken foot was never the same due to early to no medical intervention in the olden days – and her mobility and posture was affected all her life.

There are horror stories about modern medicine as well as olden times stories. Sometimes things just don’t go well or people make mistakes in judgment.

I had torn ligaments in my ankle and never had an x-ray for it. The doctor was older very skilled and my ankle works wonderfully after 6 weeks in a cast 🙂
Physical therapy he suggested take walks through the meadow. Worked really well.

Was at the docs twice because of my ribs after a fall last week. First doc asked about the pain and said it was probably not a fracture because I said i felt better than right after the fall. then pushed my rib cage together a bit till I yelled. After that, he said it may be a fracture but he is not going to put me in a cast anyway. So, rest and ibuprofen and come back again next week. He is a very good doctor for sports injuries, chiropractic etc. as well as general practitioner. Teaches at a nearby medical school. I went back yesterday and one of his partners looked at it, listened to my deep breathing and said definitively broken as she could hear the friction at the break. Again, rest and manage the pain. Never a word about x-rays from either one. Fine with me.

I wouldn’t necessarily jump that way. In many situations, team doctors will want to ice an ankle for a day before x-rays so they get a better view. Breaking the “get it to public ERs immediately” paradigm is a supportable view.

In all my years with various large animal vets I only ran into ONE who was not good… and she specialized in goats so her horse knowledge was a bit weak. The vaccination schedule for lambs & goat kids is the same but is completely different for horses.

However she was a very good goat vet!

Without the printing press, the age of Enlightenment would have been a much different time. It’s strange to think how important something like a printer is. The fact that people were able to communicate to large audiences without having to be geographically close to them is an amazing development in history.

 

There was normally a printing press in each city, so they weren’t very hard to find. This revolutionary invention allowed people to spread their own ideas and thoughts and was a major advancement toward free speech.

It is the full stop reason to have never even considered taking their fake vaccines. Personally I was more disturbed by the amount of aluminum sufate in it, and since ingredients are listed in order, more by weight than salt, which I find scary. Better to cook from scratch, and some of those biscuit recipes really sound good.

Thank you for your kind words.

I believe that some of the issue with aluminum being listed before salt is an artifact of your reader and their funky typography. They list the following in bold: Enriched Flour Bleached, Vegetable Oil, Corn Starch, Dextrose, Leavening, Salt, Sugar, Monoglycerides. I would suspect that those are included in order of weight. After the bold portions, they have fiddly-bits, such as “baking soda, sodium aluminum phosphate, monocalcium phosphate” after “Leavening”. I don’t believe those are in any order — indeed, the vegetable oil section says that they can use a variety of oils but doesn’t say that this particular batch has any particular oil in it.

That said, there are many nice things you can do if you start from scratch — and, if you have the materials and abilities, I would certainly recommend doing so. The BQ Project, however, is based on, “what can I do to keep running if I have some Bisquick boxes and there’s a “supply-chain disruption”?

I believe this to be the case for ingredients (the bolded stuff), but not sub-ingredients (the fiddly bits).

Enriched flour, for instance, has folic acid in it, which lists it ahead of Vegetable Oil. While I’ll believe that there is more flour than oil in BQ, I do not believe that there is more folic acid than oil.

I have good news. I ordered from a specific place 4 weeks ago and today my package came. I traced it all the way from original departure to NY. It moved quickly into a container to be disbursed to the the country. The container took good two weeks to move and surprise it came today. All in there as promised. I most likely need to ask Gail or Wolf about something.
One thing is do not go with the cheapest . Do not fill out a form. I am glad my husband buy in other countries all the time because of his train stuff he also sells it when he has stuff he does not want any longer like to UK. He knew what to do and what not to do.

I know time is short in those hearings and questioners want to get all their points in, but just once I’d like someone to ask, “Why can’t you answer the question?” I want to know if they are saying they don’t know the answer, if they are saying department policy won’t allow them to answer, if the answer is classified, etc.

That would open a new area of investigation, even outside the hearings. The assistant to the primary head of the ABC agency doesn’t know that answer? Is that person incompetent, or worse, lying? Once upon a time, I explained to a unit chief why I liked President Trump after the u/c made a snarky comment at the break area on Turkey-pardon day. I said Trump’s ways are endearing to me, I myself was never known for tact, and I appreciated the many good things he was doing for us all like giving his salary to good causes since he did not need extra $. The u/c did not fire me for speaking up though you are probably right I was in the minority.

Much later, I was told some thought I was naive. That is not a bad thing if the alternative is knowing some around you are doing things they should not. Then, you have to walk away. In a hierarchical management organization where many are veterans, there is the tendency to obey superiors. I never learned any of that so try to treat everyone equally and always say what I believe is correct. It is much easier to remember when one is not fibbing and people know where you stand. Others might not like you, but truth is a gift.

I’m glad she’s making those reports, but she said something that someone should never say in a public video like that, IMO. She said she has an amazing ability to dissociate, indicating that has helped her get through the things she has witnessed, and that if she didn’t have that, she would not have been here this long and that she “would have probably pulled the trigger.” I hope that doesn’t come back to bite her at some point.

As for the concrete — that reminds me that Q made some points about people using the term “concrete.” It might have no relation to this. I’m so sick of these people and their communism.

There was really bad news following the White House celebrating their current economic success. Brian Deese stated the White House intends to use the federal government to get involved in supply chains (distribution), pricing (federal price controls), availability (distribution of products under newly claimed emergency federal authority power via the “pandemic”) and providing relief (protecting urban areas).

I think it’s saying that people can be both obese and fit, and that we are discriminating against those who don’t fit both the idea of what fitness is perceived to be, as well as those who literally can’t fit into gym clothing and equipment.

For fitness to be truly inclusive, it will require many more practical changes: redesigned machines, much more visibility and opportunity for plus-size fitness models, multiple activewear brands selling 7X clothing. Beyond that, it will require a fundamental shift in our understanding of fitness, health, and weight. 

In a world where size is not used as a measurement of intelligence, competence, or mental stability, it might be possible to stop using it as a measurement of fitness too.

The article advocates for legislation to prevent/stop fat children being given lower grades, fat employees being paid less, etc. — which are problems I’ve never heard of.

There was nothing in the article about blood sugar levels, pre-diabetes and diabetes, the foods people eat, or blood work in relation to health.

You can “fake it” sort of, if you are fat, but you are NOT really fit.

Body fat is hard on your organs. It’s hard on the joints. It causes diabetes in the longer term. It contributes to infertility and menstrual problems. There is nothing “healthy” about being fat.

This is just another offshoot of “everybody is ok,” the same as acceptance of transgender and other issues. We can’t have standards, because that’s “mean.”

I hear you. The article starts off with the experience of a lady who had participated in strenuous sports (I forget what) and wanted to shake up her fitness routine. She already was doing weight training, etc. When she went to a gym for new ideas in personal training, they treated her (a size 16) as if she didn’t know anything about fitness or calories. So that’s where the article is coming from.

Funny that you don’t see any elite athletes who are size 16, except maybe in weightlifting or wrestling. I never see amateurs of that size who can keep up, either.

The article addresses the challenges of plus-sized women who want to go to a gym. Yet, going to a gym is not required to exercise. A simple internet search shows many things that can be done from home.

You’re spot on, and the article doesn’t touch these subjects:

According to the BQ Nutrition Facts, a “serving” is 1/3 cup, or 40g. That means that a “cup” would be 3 servings, or 120g. The recipe calls for 2-1/4 cups — which would be 270g (120+120+30). One eighth of that (for a single biscuit) would be 33.75g.

According to the NDM Nutrition Facts, a “serving” is 23g, which makes a cup of pseudomilk. The recipe calls for 2/3 cups milk, so it needs 16g minus 1/3g of NDM. The pseudomilk instructions say to use 3-3/4 cups water to make a quart (4 cups) pseudomilk. If you look at that in 1/4 cups, that’s 15/4 cups water + NDM = 16/4 cups.

The water measure, then, is 2/3c x 15/16 (milkization) x 1/8 (single biscuit), or 30/384 cups. Since a cup is 12 ounces, and an ounce is 3 Tbsp, a cup is 36 Tbsp, and the water measure would be 2.8125 Tbsp, or drops shy of an ounce. Just for fun, we can multiply that by 8 and get 22.5, then “milkify” it by multiplying by 16/15 to get 24….and 24/36 of a cup is what the recipe asked for.

The method would be to preheat the t-o with its tray to 425. I’ll weigh out 16g of NDM, pour 3 Tbsp of water into a shotglass, put the NDM in, and stir. Then I’ll weigh out 34g of BQ, into my “mixing bowl”, stir, and drop onto a sheet of aluminum foil marked with a star. I can then pull the tray out of the oven, lift the sheet of aluminum, and drop it on the tray, putting back in the t-o for 10 minutes. From then, observation to ensure the top gets sufficiently browned. Once that happens, set foil aside to cool.

I can then roll into batch #2, which will be marked by a teardrop. That’s the feeling you have when you go to make something and realize you have no NDM. 34g of BQ and 3 Tbsp of water.

The NDM looks like sand but doesn’t weigh anything, then when I put the water in and mixed…..I don’t think the NDM absorbed the liquid it was supposed to fast enough.

A quick reminder to everyone else that a lot of prepper guides recommend adding Bisquick to your preps because it’s:

  • Widely available and budget-friendly
  • Very versatile
  • Has a long shelf-life
  • Doesn’t require much in the way of ingredients, equipment, or resources to whip up something edible

Yeah, obviously from-scratch homemade biscuits and pancakes are going to knock the socks off toaster Bisquick (no offense to anyone posting recipes–I enjoy reading those, too), but that’s not the point here. The point is to have something edible ready-to-go in the larder when milk, butter, refrigeration, or getting to store aren’t available options. This is emergency food. It’s not supposed to be a brag-worthy homemade dessert with the finest ingredients. It’s supposed to supplement your other emergency grub and keep you from starving in an emergency or engineered food shortage. That’s the point-of-view cthulu is writing from, and the snark he has gotten for it over the past day or two is disappointing.

I mean, yeah, I’d prefer fresh goat milk in a SHTF situation, too. And homemade buttermilk biscuits. And fresh venison. But I’m going to plan realistically, assume none of that will be available, and keep some Bisquick in the pantry along with powdered milk and instant potatoes and other processed food people turn their noses up at because it’s better than going hungry when the power is out for several days or the grocery stores unreachable/empty because the local government hasn’t plowed the roads after a major snow storm or there’s government-enforced dairy rationing or…any number of disasters. It’s good to have this stuff around and know how to cook it just in case, and a lot of people seem to miss that point with the, “Well, this from-scratch recipe with these fresh-from-the-farm ingredients that that require refrigeration/electricity/burdensome equipment in an emergency is way better than your Bisquick creations.” Yeah, no kidding. That’s not the point here.

My comment about power outages was intended from a general prepping perspective, not anything specific to what SD has warned about. 

I started my own prepping journey years ago after a major blizzard completely wiped out the local food supply chain. 25+ inch snowfall made it impossible for delivery trucks to resupply the local grocery stores for 1-2 weeks. That was my first encounter with empty grocery store shelves, and it was scary. Prepping for natural disasters is prudent, too. 

The next wake-up call came in the past year when I had two major 24+ hour power outages–one in the winter and one in the summer–coupled with the Cyber Polygon warnings about cyber attacks on the electrical grid (more on that later). Those power outages, especially the one in sub-freezing weather, made me appreciate the need to 1) have a way to stay warm, 2) have the means and fuel to cook a meal in an extended outage, 3) have meals that are quick and easy to prepare in an emergency with limited fuel, ingredients, and equipment, 4) have a plan for lack of refrigeration. 

You mentioned above hunting deer. Do you have a plan to cook, serve, and store it during a long-term utility outage? I’m not snarking. This is a genuine logistical question. Additionally, if you are out hunting for deer due to food shortages, then 1) you’ll probably have company, and 2) should expect a deer scarcity as others are forced to hunt, too.

Now back to cyber attacks on the electrical grid. As recently as yesterday, the World Economic Forum was once again warning threatening cyber attacks. They have been warning about cyber attacks on utilities since Cyber Polygon in 2020, which makes me suspect that cutting the utilities in in their playbook. I recommend preparing accordingly. Stock some food that can be easily prepared in a utility outage, store water, have equipment and fuel to cook that doesn’t require utilities, have a way to stay warm, and have a plan for bathroom needs.

If you feel like experimenting, there are a lot of camping-specific Bisquick recipes out there on the internet (Campfire Drop Bisquick Biscuits is really a popular one).

I’d actually hope that practiced skill with BQ and toaster ovens might provide a variety of alternatives as needed (BQ over a camp fire, BQ on an engine block, BQ on a backyard BBQ….).

I’ve done two bakes towards single serving biscuits, and I’m not happy with that yet to move on.

Very much this. And people have been conditioned to order-out or pick up fresh goods or get some frozen dinner. The Bisquick toaster-oven concept is to strip out some finery and do basic things when things are not as well as they could be.

Your BQ project has definitely motivated me to make up some more gluten free biscuit and bread mixes like I used to do, this time with ghee or coconut oil so they don ‘t have to be stored in the fridge. I have all the ingredients, but if there comes a situation where we have to adjust to multiple difficulties, I will be glad the work is reduced to just adding water and stirring.

OK, review — Batch #1 weighed out the BQ in the mixing bowl. In a separate tiny glass bowl, I measured out 16g of NDM — which turns out to be an awful lot. I had my shot glass with 2 Tbsp of water (after having caught and fixed a major calculation flub by looking at the markings on the shotglass) and mixed it into the tiny glass bowl. Then I took that pseudo milk and mixed it into the BQ and poured it on a sheet of tinfoil, then put the tinfoil in the tray in the oven.

The results were something, but they weren’t biscuity. More like a pancake. Flavor wasn’t bad. The preheated tray made the bottom quite brown. I had one more accident on this one — when I came in to check on it at 10 minutes, it had run out of time. So I had to put in another quarter and turn the knob. I don’t think its flaws can be blamed on that, however.

Batch #2 weighed out the BQ in the mixing bowl, measured 1.5 Tbsp in the shotglass, mixed, and put on tinfoil — which went into the t-o on the tray. The good news is that it looked like a biscuit. Took forever to get browned (NDM assists browning?). Bottom was quite brown. Tasted ok. But it was crumb-y — if you tried to cut off a piece or pull off a piece to put some butter on, it was like shattering glass — crumbs went everywhere. (NDM appears to assist integrity).

I’m not yet ready to recommend something to Scott, yet. Then, again, I bought 1.7 kilos of BQ, and I’ve only used 70 grams so far.

Alrighty then. My daughter gets married this Friday. I apparently have to participate in the event and get dressed up. My suggestion to go to Vegas like me and my wife did was totally ignored so here we are.
