The mole number is arbitrary – it is not set by nature. It was chosen to make our chosen units of laboratory weights (grams) align with the numbers of protons and neutrons in the various atoms. E.g., so that one mole of hydrogen atoms weighed roughly a gram, and one mole of carbon atoms weighs roughly 12 grams. We could have English moles, Imperial moles, or even Star Trek Federation moles using some different standard of weight.
One way to think about this, is that a few grams of stuff (say, 56 grams of iron) is a little over a mole of it, meaning just over six hundred sextillion atoms.
Given that there are an estimated 10^80 atoms in the universe, a mere 10^23 atoms is just ONE 10^57th of it.
