Happy Pill

Ingredients

  • 1 ounce Don Q Cristal rum
  • 1 ounce Plantation dark rum
  • 1 ounce Kalani coconut liqueur
  • 3/4 ounce grilled pineapple juice*
  • 3/4 ounce orange juice, freshly squeezed
  • 1/2 ounce lime juice, freshly squeezed
  • 1/2 ounce cream of coconut
  • Garnish: cherry
  • Garnish: orange slice
  • Garnish: grated nutmeg

Steps

  1. Add the white rum, dark rum, coconut liqueur, grilled pineapple juice, orange juice, lime juice and cream of coconut into a shaker with ice and shake until well-chilled.
  2. Pour into a highball glass over crushed ice.
  3. Garnish with a skewered cherry and orange slice.
  4. Dust with fresh grated nutmeg.

*Grilled pineapple juice: Grill 6 pineapple wedges in a stovetop pan on medium-high heat for 2 minutes on each side. Muddle and strain.

Gin Fizz

Ingredients

  • 2 ounces gin
  • 1 ounce lemon juice, freshly squeezed
  • 3/4 ounce simple syrup
  • 1 egg white (about 1/2 ounce)
  • Club soda, to top (about 1 ounce)

Steps

  1. Add the gin, lemon juice, simple syrup and egg white to a shaker and vigorously dry-shake (without ice) for about 15 seconds.
  2. Add 3 or 4 ice cubes and shake vigorously until well-chilled.
  3. Double-strain into a chilled Collins glass and top with club soda.

The Best Amaretto Sour

INGREDIENTS  

  • 1 egg white
  • 3 ounces Amaretto
  • 1.5 ounces bourbon
  • 2 ounces lemon juice
  • 2 teaspoons simple syrup
  • 1 lemon twist
  • 2 brandied cherries optional

INSTRUCTIONS 

  • Put the egg white in a shaker or ball jar, and give several good shakes to loosen it.
  • Add the remaining liquids and shake again. Add ice to the container and shake or swirl to chill it. Pour into lowballs over ice.
  • Garnish with the twist and, if using, the cherries.

NOTES

If you don’t want to use a shaker you can use a hand blender or whisk to make the egg white gently frothy.

As it is derby weekend, the Friday cocktail is:

Classic Bourbon Mint Julep

Ingredients

  • 4 to 5 mint sprigs, leaves only
  • 2 sugar cubes, or 1/2 ounce simple syrup
  • 2 1/2 ounces bourbon whiskey
  • Mint sprig, for garnish

Steps to Make It

  1. Gather the ingredients.Ingredients to make classic mint julep
  2. Place the mint leaves and sugar or simple syrup into a julep cup, collins glass, or double old-fashioned glass. Muddle well to dissolve the sugar and release the oil and aroma of the mint.Pour simple syrup into cup.
  3. Add the bourbon. Fill the glass with crushed ice and stir well until the glass becomes frosty. Garnish with a mint sprig.Stirting ice in mint julep.

When finished with said drink, look for a place to lie down.
