In this writer’s hometown, for the first time in memory, all live Christmas trees are sold out all over town AND HAVE BEEN FOR DAYS. We lucked out in that the lot where we buy ours was unloading a fresh shipment of trees the day we went to buy. In addition to the real pine trees now in living rooms across the Bi-State, outdoor lights are hung, tickets and reservations for Church services are sold out in many places….

It’s as if the people took XVII to heart with the last drop.

And now, many out on the fruited plain are trying to get the American spirit even more jump started.

2. No running with scissors, we’re going to need them to cut wrapping paper

Honestly, this is one of the best ones they’ve done.

Given the sheer amount of stuff going on, we’ll just skip straight to the important stuff.

Power breakfast frittata (made this yesterday);

1 cup leftover veggies (yesterday it was sweet and bell peppers, onions and broccoli)

1 cup leftover meat cut smallish (yesterday it was chicken breast fillets with roasted garlic. Bacon is always a good alternative, just cook it first.)

6 pastured eggs

Butter

Grease a 9″ pie plate with butter

Spread the veggies and meat in the bottom

Whisk the eggs with a little Kosher salt and fresh ground black pepper

Pour the eggs over the veggies and meat in the pie plate.

Bake at 350 for around 30-35 minutes until the center is solid.

Pull out of the oven and let it set before serving.
